Rooibos (Aspalathus linearis) has been harvested and fermented by the Khoisan people of South Africa's Cederberg mountains for centuries; the fine red needles brew a honey-sweet, caffeine-free cup that became a national drink and gained global popularity in the 20th century.

Preparation
